German, and the Grand Prix has been the benchmark road tyre for long enough that most comparisons still start with it. If you want a fast tyre that does not punish you for riding it in February, this is where most people end up.

The Grand Prix 5000 comes in tube-type and tubeless versions, and they are not interchangeable, so check which your rims want before ordering. The tubeless version needs a tubeless-ready rim and sealant to work at all.

Wider is not slower. A 28 or 30mm tyre at the right pressure rolls as well as a 25 on real roads and is considerably more comfortable, so size up if the frame will clear it.
